Our story

Twelve years, roasted slowly.

Every bean is a year we somehow survived. Scroll down and watch them roast — from green and hopeful to dark, bitter and excellent. Like our chef.

    Nonna's recipe (allegedly)

    Our founder claims he inherited a secret sauce recipe from his Nonna. He's from Meerut. We've stopped asking.

    First wood-fired oven

    It reached 450°C on day one. The fire department now knows us by name. They also order the Diavola.

    We added sushi

    An Italian place selling sushi. Three food critics cried. The Confused Dragon Roll outsold everything.

    Sold pasta through a kitchen window for a year. Called it ‘an exclusive drive-thru experience’. Charged extra.

The process

From flour to “oh my god.”

Our dough rests for 72 hours. It gets more sleep than our staff. It's also more stretchy about deadlines.
